So, my partner, Q, is jump starting a keto diet. Er-go, I am learning to cook Keto. It is fairly simple to do, the removal of carbs, but making it pop has been a little challenging. The absence of bread is a big deal, when you are used to bread, grains, etc. being a large portion of the meal. Between Pinterest, and a Keto Diet Plan, I have played a bit. Carbs can creep up on your quickly (usually in a vegetable with higher sugars), so keep on the lookout if you are trying for ketosis.
Today, I made a breakfast meal with a spin for dinner. It is basically a smoked salmon version of scrambled eggs. I got the original recipe from Pinterest, but did what I do, and changed with with other things that I know… such as how to make scrambled eggs.
- 2 oz smoked salmon
- 4-5 large eggs (Original called for 4, but I used 5 to make 2 meal portions)
- 1/2 Bell Pepper (I used orange – you can use the one that you like best)
- 1/2 c. cottage cheese (you could use a skim version if you like, or heavy cream with some cheese)
- 1/2 tsp minced garlic (about 1 clove)
- 1/8 tsp red pepper flakes/crushed red pepper (or more for a bite)
- 2 tbs olive oil
- 1/10 tsp salt
- 1/10 tsp pepper
- 1 tbs of olive oil into a small frying pan on medium heat. Cut the bell pepper into desired pieces, such as diced chunks. Saute the peppers until they start to carmelize. Add the red pepper into the pan, lower heat, and stir together
- While the peppers are going, get a mixing bowl and the eggs, garlic, salt, pepper, and cottage cheese. Mix together into a homogenous mixture.
- Take about 1 oz of the smoked salmon and stir into the eggs as shreds.
- Add the other oz of olive oil to another plan on medium to low heat (the hotter the quicker and more stirring you would need to avoid browning). Add the eggs and stir in the peppers that were sauteed.
- When the eggs finish plate them and lay the the rest of the smoked salmon on top.
- Serve and eat.
